Amina’s Healthy Banana Bread with Walnuts

Soft, moist, and perfectly sweet — this banana bread is made with whole wheat flour, naturally sweetened ripe bananas, and crunchy walnuts. It’s wholesome enough for breakfast but delicious enough to feel like a treat. This is my go-to when I have bananas that are starting to get too ripe (nobody eats these in my household) so I end up making this quite often, and my kids love it!

Turn cooking mode on

Preheat the Oven

Set oven to 325°F (165°C). Lightly grease a 9×5-inch loaf pan and line with parchment paper for easy removal.

Whisk the Wet Ingredients

1.

In a large mixing bowl, whisk together olive oil and maple syrup until smooth. Add eggs and beat well. Stir in mashed bananas, milk, and vanilla.

Add the Dry Ingredients

1.

Sprinkle baking soda, salt, and cinnamon over the wet ingredients and mix in. Add the whole wheat flour and stir gently until just combined — don’t overmix. Fold in chopped walnuts.

Bake

1.

Pour the batter into the prepared loaf pan. Top with extra chopped walnuts. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.

Cool & Slice

1.

Let the loaf cool in the pan for 10 minutes, then lift it out and transfer to a wire rack to cool completely before slicing.
